Crunchy Coconut Cookies

Made these great cookies Thursday morning---first tasted them when my co-worker, Janet brought them to school to share with the staff one day. YUM--so good and really easy to make. I don't know the source to credit on this recipe. Now my justification for making these was that I just really wanted cookies and the recipe only called for 1 1/4 cups of flour---so it would be a small batch. I know, you are snickering now...but you see my problem. Try these cookies if you just get the craving for simple coconut cookies!

Crunchy Coconut Cookies
1/2 c. butter, 1/2 c. brown sugar, 1/2 c. white sugar, 1 egg, 1 1/4 c. flour, 1/2 tsp. baking soda, 1/2 tsp. baking powder, 1/2 tsp. salt, 1/2 tsp. vanilla, 1 1/3 c. flaked coconut.

Cream butter and sugar. Add egg and beat well. Mix flour, soda, baking powder and salt into creamed mixture. Add vanilla and beat well. Add in coconut. Drop by teaspoon full onto ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes. Yields: 3 dozen



YOGA
I went to the 4:15 pm yoga class. It felt really good. I am more limber in the afternoon than in the morning, so I felt flexible at class. I felt bad for making the cookies---but not too bad. I drank lots of water today and ate a small slice of quiche and a little salad that I made for dinner. My husband, Jon was so happy to have something special for dinner when he got home yesterday. I was at yoga by then. I usually have a more balanced eating day---but you can see my problem.I know, I know...this is so trivial and self-absorbed, but hey, keep reading!   1. Yes, I can see how this will be therapeutic for you. A friend told me about a great cookie recipe she had made...."Healthy Oatmeal Cookies," whole wheat flour, walnuts, honey, vanilla. I will try to get the details. One suggestion....have you thought about only baking very small cookies?

  2. this blog makes me want to try yoga!! i've never done it before but if it would make me not feel guilty about eating cookies...sign me up! haha.

    mike...in the reverse, maybe the answer is to make one BIG cookie. that way, you can rationalize by saying that you only had one cookie!! haha

  4. I love the comments! Yes, small cookies are a sneaky idea, because you can graze by them and say to yourself.."They are so small, why not eat one more?" Of course, 30 minutes later,you are back at the well!
    The giant cookie idea is also great because you can just make one batch and then you are done. No time spent standing around while the next sheet full is baking...that always provides too much time for guilt.
